Miami and the Florida Keys
INSANE Fishing On My Birthday!
A birthday spearfishing trip from Miami to the Florida Keys, then cleaning yellowtail snapper and frying it in pork fat with homemade tartare sauce.
The ultimate birthday spearfishing trip. We started off the coast of Miami, diving a shipwreck and landing a massive cubera snapper, then drove down to the Florida Keys for amberjack, yellowtail snapper, rainbow runners and even a wahoo.
Back on land, I show you how I clean, gut and scale the yellowtail snapper, along with some fresh shrimp we caught by hand in the bay. Then it is time to fry it in rich pork fat for a crispy, golden finish.
Tartare sauce
- 1/3 cup mayo
- Juice of a small lemon
- 1 tbsp minced red onion
- 1 tbsp prepared horseradish
- 1/2 tbsp minced dill
- 1/2 tbsp fresh minced tarragon
- 1 tbsp brown mustard
- 3 tbsp minced kosher dill pickles
- 1 squirt of agave nectar
- Salt and pepper to taste
